Watercress And Red Chicory Salad

In honour of the onset of spring, lighter evenings and warmer days, a zingy watercress and red chicory salad dressed with fresh orange, an orange vinaigrette and toasted hazelnuts. ┬áIf you’ve not grown watercress before then I throughly recommend it. Having tried many, we’ve found the best seeds to be from Franchi. Sow it in bags, keep in light shade and beyond keeping the compost damp it needs very little attention.

Watercress and Chicory Salad

Lovely for two people for lunch.

Watercress And Red Chicory Salad

Yield: 2



A big bunch of watercress washed and trimmed.
Some red chicory cut the leave in half if big otherwise leave whole.
A navel orange, peeled, segmented and pith removed.
A handful of whole blanched hazelnuts chopped in half and toasted.


3 tablespoons of olive oil
Juice of half a navel orange
A tablespoon of white wine vinegar
A teaspoon of clear honey
A teaspoon of Dijon mustard
Some salt and pepper



Put the watercress, chicory and orange segments on a serving dish.

Whisk together the vinaigrette ingredients and season with salt and pepper.

Dress the salad with the vinaigrette and scatter the hazelnuts on top.
